For four people, preparation: 20 minutes

  • • 4 pippin apples • 4 speculoos (brown sugar biscuits) • 25 g lightly salted butter • 4 teaspoons brown sugar • the juice of one untreated orange

Preheat the oven to 180°C (gas mark 4). Wash and wipe the apples, remove the core using a corer, taking care not to make a hole in the bottom. Crumble 3 speculoos, distribute them in the apples, add the butter in slivers and the brown sugar, drizzle with the orange juice. Bake for approximately 20 minutes (the apples are cooked when they start to smell good). Crumble the last speculoos, and sprinkle the pieces over the apples just before serving, so that they stay crunchy.
